Pumpkin Spice Muffins Recipe
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup dried pumpkin powder
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons pumpkin pie spice (or a mix of ground cinnamon, ginger, nutmeg, and cloves)
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon pure vanilla extract
Optional:
- 1 cup chopped nuts (walnuts, pecans, or almonds)
- 1/2 cup raisins or dried cranberries
Instructions:

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the cups with butter or non-stick cooking spray.

In a large bowl, whisk together the all-purpose flour, dried pumpkin powder, granulated sugar, brown sugar, baking powder, baking soda, salt, and pumpkin pie spice. Make sure the dried pumpkin powder is well distributed in the dry ingredients.

In a separate bowl, combine the milk, vegetable oil, eggs, and vanilla extract. Whisk until well mixed.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix the batter, as this can result in tough muffins.

If desired, fold in the chopped nuts and raisins or dried cranberries.

Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs. The muffins should be slightly golden brown on the edges.

Remove the muffin tin from the oven and let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

I use Vancouver Freeze Dried pumpkin powder in my homemade dog food. My dog likes it and it adds nutrients to her food
I've purchased powder and sent numerous emails and messages, but never a response. I need to understand where the fruit and veggies come from and what the ratio of water to powder should be to reconstitute pumpkin to that of canned puree.
